How to make Tapioca Pearls

Having a refreshing MILK TEA on a hot sunny day is the best! But many people love the drink just for its tapioca or also known as “pearl”. Tapioca pearls complement sweet drinks like Milk tea and Shakes. If you want a bit of a chewy texture to nibble on in your customer’s drink, make sure to follow the following steps.


Ingredients

  • 300g Tapioca Pearls  
  • 150g Brown Sugar  
  • 1.5L Water

Directions

  1. Boil Water
    • Use 50ml of water for every 10 grams of tapioca pearl
  2. Pour Tapioca Pearls and Brown sugar to the boiling water
    • Use 5 grams of brown sugar for every 10 grams of tapioca pearl
  3. Stir
    • Make sure to stir gently until some of the tapioca pearls float to the top of the water
  4. Cover
    • Continue heating for 45 minutes
  5. Stir
    • Uncover the pot and stir to prevent tapioca pearls from sticking to the pot
    • Check tapioca pearls consistency. They should turn translucent
  6. Strain
    • Take tapioca pearls off heat. Separate the liquid from the pearls.
    • Save the liquid to use for brown sugar syrup
    • Make sure to remove as much excess liquid
  7. Wash pearls
    • Use running water to prevent them from sticking together
    • Make sure there are no scratch residues
  8. Mix one part brown sugar to two parts of water
    • Stir the brown sugar until it fully dissolve
  9. Soak
    • Soak tapioca pearls in the mixture
